How to make Bird's Nest soup with rock sugar

Ingredients:

5g dry bird's nest, soaked until soft

5 lotus seeds or ginkgo nuts

20g rock sugar

1 cup of purified water

3 slices of ginger

Cooking Instructions:

Step 1: Soak the bird's nest in boiled then cooled water for 2-3 hours until it becomes soft and translucent. Change the water 2-3 times during soaking. Place in a sieve and rinse under running water. Tear the bird's nest into strands.

Step 2: Boil the lotus seeds and ginkgo nuts until soft, about 15 minutes. Remove from the water and soak again in warm water for 10 minutes.

Step 3: Crush the rock sugar. Then, cook it with a cup of purified water until the sugar dissolves.

Step 4: Slice the ginger into strands.

Step 5: Combine the dissolved sugar water, lotus seeds, ginger, and bird's nest in a bowl.

Step 6: Steam over water (in a double boiler) for 20 to 25 minutes, starting the timer when the water in the pot begins to boil.
